Recipe for Smoked Snoek Quiche – made super simple with pre-rolled puff pastry. A delicious dinner for warm Summer evenings.

1 roll, ready-made puff pastry
1 red onion, finely chopped
2 garlic cloves, crushed
2tsp paprika
1tsp seafood/fish spice
500g smoked snoek
2 cups grated mature cheddar cheese
3 eggs
250ml cream
2tbsn fresh parsley, finely chopped
salt & black pepper to taste

How to
Roll out the puff pastry on a floured surface and cut to fit into the dish of your choice. (remember to grease the dish beforehand). Gently press the pastry into the baking dish.

Fry the onion and garlic gently for 4-5 minutes until soft and translucent. Add the seasonings, snoek, cheese and parsley. Spoon the mixture on top of the pastry.

Beat together the eggs, cream, salt & pepper. Pour over the filling.

Bake in a 180C, pre-heated oven until the filling is set but still slightly jiggly in the middle and the pastry is nice and golden.

Allow to cool down to room temperature and serve with salad.
