Recipe for Curried Avocado Soup – you can make this with cream, or with yoghurt for a low fat version.

Ingredients
8 very ripe avocados
2/3 cup lime or lemon uice
2 cloves garlic, crushed
2 tablespoons mayonnaise
1 tsp. curry powder
2 cups heavy cream (or plain yoghurt for lower fat version)
2 cups chicken broth or stock
1/4 cup minced fresh parsley
2 tablespoons minced fresh coriander or 1/2 tsp. dried coriander
1 tsp. Tabasco sauce
White pepper and rock salt to taste

How to
Puree avocados, lime/lemon juice, garlic, mayonnaise and curry powder in food processor or blender until smooth.

Pour mixture into large bowl or soup tureen.

Stir in broth (or stock), parsley, coriander, Tabasco sauce, salt and pepper. Cover.

Store in fridge for up to two days.

Stir in cream or yoghurt just before serving.

Serve chilled.
