Recipe for Chocolate Chip Banana Bars with coconut and cinnamon.

Ingredients
1 cup all-purpose flour

1 cup whole-wheat flour
2 tsp baking powder

1/2 tsp salt

1 tsp Saigon Cassia Cinnamon (or ground cinnamon)
3/4 cup canola oil
1 cup brown sugar

1/3 cup granulated sugar

2 tsp pure vanilla extract
1 egg

2 medium, ripe bananas 
(mashed)
12 oz semisweet chocolate chips


1/3 cup walnuts, chopped
1/3 cup toasted coconut

How to
Preheat oven to 350F/180C.

In one bowl, combine flour, baking powder, cinnamon and salt; set aside.

In another bowl or in the bowl of a stand mixer, cream the butter, brown sugar and granulated sugar. Add egg and vanilla and mix well.

Mash bananas and add to creamed mixture. With a wooden spoon, blend in dry ingredients, then stir in chocolate chips.

Turn mixture into a greased 13×9-inch baking pan. Top with toasted coconut.

Bake at 180 for 25-30 minutes or until golden brown and top is firm to the touch. Cool and cut into bars.
