Raw Date and Nut Bars – the perfect healthy lunch box filler or on-the-go snack
70g Sunflower seeds
30g Coconut flour
100g Activated nuts – almonds or pecans work well
4 tablespoons Lemon Juice
Place the dates, seeds and lemon juice in a food processor. Blend till a paste
Add the nuts and coconut flour and blend for 10 seconds.
Line a baking pan in baking paper or on a silicon mat and dry in the oven at
70c for 2 hours or leave overnight in the oven after one has baked
something, this saves on electricity (switch off the oven when drying
overnight). Otherwise lie in the sun on a very hot day.
Remove from oven and slice with a sharp knife into bars.
Keep the bars in a sealed glass container in the fridge for up to 3 weeks.
NOTE: Activated nuts is a process whereby one soaks nuts overnight and drains the
water off the next day. Specifically, whole almonds, walnuts, hazelnuts and pecan
nuts need to be activated. This helps your body to absorb the protein present
in the nut itself.
