Vegetarian recipe for Halloumi Cheese Tacos with chipotle yoghurt and salsa

250g cherry tomatoes – cut into quarters
2 tbsp chipotle tabasco sauce
2 lime – zest & juice
2 lettuce – slice into ribbons
8 tortilla wraps
2 tsp smoked paprika
160 ml yoghurt
200g halloumi cheese – cut into 1cm slices
10g fresh mint – chop finely
salt & pepper (from your pantry)
olive oil (from your pantry)

How to
Preparation: Preheat the oven at 180°c. Prepare all ingredients as indicated above.

Salsa: In a small bowl add the tomatoes, mint, lime juice, zest and season with salt and pepper.

Chipotle yoghurt: In a small bowl combine the yoghurt with the chipotle sauce.

Halloumi: Add the halloumi slices to a baking tray. Drizzle with olive oil and sprinkle over the smoked paprika. Put the tray directly under the grill for 4-5 minutes or until warmed through, softened and golden brown. Watch them as they could burn easily.

Tortillas: Just before serving, heat the tortillas for about 20 seconds on each side in a hot, dry frying pan.

Serve: Place the tortillas, lettuce, halloumi, salsa and chipotle yoghurt in the centre of the table, ready to build your tacos and dig in.
