Recipe for orange cake – a light and delicious treat

250 g butter
2 cups caster sugar
6 eggs
2 tbsp. orange rind
2 cups flour
1 cup self-raising flour
½ cup cream
½ cup orange juice
10 ml baking powder

How to
With an electric mixer, beat the butter and sugar till pale.

Add the eggs, one at a time, beating well after each addition (with an electric mixer).

Add orange rind and juice, and stir to combine with mixer.

Add dry ingredients and cream and stir well with a spoon

Spoon in greased pan, and smooth.

Bake at 180 for about 30-40 minutes.

After baking brush with some Orange marmalade, or orange juice. Sprinkle with icing sugar.

For the sauce, I make a mixture of golden syrup, marmalade and orange juice. Cook in the microwave until liquid and then pour over. I make quite a bit of this mixture (about 150 ml) so that it soaks through the top.
