Recipe for vegan No-Bake Blueberry Bars


Bottom Layer:
1 cup oat flour (*see note below)
2 tablespoons coconut water or water
2 tablespoons coconut oil, melted
1 tablespoon maple syrup
1 tablespoon molasses

Top Layer:
1 1/2 fresh or frozen and blueberries, puréed
1 2/3 oat flour
1/4 cup maple syrup
1 tablespoon molasses
3 tablespoons coconut oil, melted

How to
Line a 8×8 inch (20cm x 20cm) baking pan with parchment paper.

For the bottom layer, combine all of the ingredients in a medium bowl. Press the bottom layer firmly into the prepared pan. Place in the freezer for 20 minutes to firm up.

To prepare the top layer, stir all of the ingredients in a medium bowl until well blended. Spread evenly over the bottom layer.

Return to the refrigerator until set before cutting into 2-inch (5cm x 5cm) bars. Keep refrigerated.

To make oat flour at home, simply process equivalent amounts of rolled oats in a blender or food processor for a minute or two until finely ground into a powder.
