Make your own Focaccia Bread at home – with an easy instructional video.

750g All Purpose Flour
500ml Water
50ml Olive Oil
31g Fresh Yeast
15g Dry Yeast
1 1/2 tsp Coarse Sea Salt
1 1/2 tbsp Sugar

How to
Combine the sugar, salt and flour in a large bowl;

In a separate jug combine all the wet ingredients including the yeast and tempered water, making sure that the yeast has dissolved completely before adding to the dry ingredients in the bowl;

Also add 3/4 of the olive oil to the bowl and start bringing the mixture together using your hands. Once it starts to form a dough you may find it easier to work with if you tip it on to the bench and start kneading it on the work surface. It will take you a total of 10 minutes to knead the bread and the resulting dough should be elastic and smooth;

Place the dough in a bowl and cover with a cloth and leave in a moderately hot place to allow to proof/rise for 1 hour. It should double in volume;

Knock the bread back by placing the bread on the work surface and knocking the air out of it by kneading for a further 30 seconds;

Using your fist bash the bread out into a rectangle shape that will fit your oven tray;

Spread some olive oil on to the bottom of the tray at this stage using your hand to make sure it is evenly distributed. Transfer the dough to the tray and using your hands make sure that the bread has been pushed into all the corners. Cover the tray and return to moderately warm place for another 25 minutes to allow rise again;

Remove the cloth and pour some olive oil over the top of the dough. Using two fingers poke little holes all over the foccacia;

lace little sprigs of rosemary and some sea salt all over the bread and allow to rise for 10 more minutes before placing into the oven at 200C/400F for 20 minutes;

Remove from the oven and place on wire rack to cool slightly before serving.
