I love the smell of Ginger Cookies baking in the oven, especially at Christmas Time.
1 1/2 teaspoonfuls baking powder
1/2 cupful lard
1/2 cupful butter
1 large cupful brown sugar
1 cupful water
1 tablespoonful ginger
1 teaspoonful cinnamon
1 teaspoonful cloves
4 cups flour
Rub the lard, butter, and sugar into a smooth paste
Sift together flour and baking powder, then add to this the butter mixture and rub together
Mix into a firm dough with the water and spices.
Roll out the dough thinly on a floured board, and cut out cookies with a round biscuit-cutter
Bake on a greased baking pan in a hot, steady oven set an 180C. Take out when golden.
