Have a Sunday roast with this Pan Roasted Lamb Shoulder with Tomato Salad recipe

Ingredients
800g de-boned, butterflied lamb shoulder

Lamb Marinade
2 tbsp red wine vinegar
2 tbsp olive oil (from your pantry)
2 tbsp za’atar spice
4 cloves garlic – peel and chop finely

Tomato and feta salad
4 tomatoes – cut into thick slices
100g feta – crumble
20g fresh parsley – chop coarsely
10g fresh basil – tear leaves
5 tbsp olive oil (from your pantry)
2 tbsp red wine vinegar

Tzatziki
5g fresh mint – chop coarsely
1 small cucumber
200ml yoghurt
1 clove garlic – peel and chop finely
1 tsp red wine vinegar
