Green Veggie Bowl recipe, made with stir-fried spinach, peas and zucchini. Makes a delicious plant-based meal or a great side dish.
10 ml coconut oil
2 cloves garlic crushed
1 small brown onion finely chopped
1 cup peas thawed if frozen
2 cups broccoli florets blanched
1 cup chopped zucchini
2 cups baby spinach
10 ml soy sauce optional
fresh lemon juice
1/2 cup raw cashews
handful freshly chopped mint
handful freshly chopped parsley
In a saucepan, heat the coconut oil and lightly fry the garlic and onion, until translucent.
Add the peas, broccoli and zucchini – and saute for a few minutes.
Add the spinach and fry until wilted. Add soy sauce for that umami flavour and mix through. Drizzle with lemon juice. Season to taste.
Serve with fresh lemon and top with cashew nuts and herbs.
