Have a healthy dinner on the table in 15 minutes with this recipe for Easy Vegetarian Stir Fry

2 cups purple cabbage, sliced
1 cup green cabbage, sliced
4 carrots, peeled and sliced
2 zucchini, sliced
1 pineapple, cleaned and chopped
15 ml olive oil
2 stalks lemongrass – finely chopped
2 birds eye chilli – finely chopped
1 teaspoon crushed garlic
5 cm freshly grated ginger
2 tablespoons oyster sauce
½ cup low sodium soy sauce
½ cup balsamic vinegar
½ cup good-quality vegetable stock
2 cups cooked noodles
onion sprouts to garnish

How to
First off, heat the wok and add the vegetables, oil, lemongrass, chilli, garlic and ginger.

Saute for a few minutes until the vegetables start to soften.

Add the oyster sauce, soy sauce, vinegar and stock. Remove from heat and allow to cook through.

Serve with cooked noodles and garnish with onion sprouts.
