Low-fat tuna and sweet chilli with spring onion and rocket

Mix shredded cooked or smoked chicken with a teaspoon of curry paste, a few tablespoons of mayo, chopped soft apricots and one stick of celery. Use to fill rolls or wraps.

Fry or oven bake calamari until it’s crispy and golden, and drain it on a paper towel. Fill rolls with butter lettuce, tzatziki and the calamari. Alternatively, you can use hake or another firm white fish.

Make some mini meatballs, fry them in a bit of oil, and toss in some peppadew or fruit chutney mixed with a little bit of tomato sauce. Place on some fresh rolls, and enjoy.
