A healthy, fresh and delicious Easy Carrot Salad recipe
3 large carrots peeled and grated
1 fresh red chilli or half a chilli if you want it less hot
5 cm fresh ginger grated
1 cup almond flakes
handful fresh coriander chopped
2 tablespoons red wine vinegar
1 fresh lemon juice
1 zest from one lemon
Toast the almond flakes lightly and set aside.
Grate the carrots and ginger, chop the chilli and coriander. Combine it all together in a mixing bowl.
Top with toasted almond flakes and lemon zest. Drizzle with red wine vinegar and lemon juice.
You can also add other toasted nuts or seeds.
