Delicious salad recipe with Green Beans, Cashew Nuts and Feta Cheese

250gm green beans
1 1/2 Tbsp olive oil
1 onion, peeled and finely chopped
2 garlic cloves, peeled & chopped
a selection of freshly chopped herbs, e.g. chives, basil, Italian parsley.
1/2 lemon, juiced
125 gm feta cheese, crumbled
60ml cashew nuts, roasted
sea salt and freshly ground black pepper

How to
Blanch the beans in boiling salted water until the colour is bright green

Refresh in cold water

Heat a frying pan and fry the onion, garlic and salt in olive oil until translucent

Add the fresh herbs, seasoning and lemon juice

Remove from the heat and toss in the green beans, feta and cashews
