Simple recipe for Celery Soup with cream and a touch of lemon

50g butter
2 white onions, sliced
1 entire celery stalk, chopped
1 tablespoon salt
1 bay leaf
1 litre chicken stock
½ cup cream
5-10 drops lemon juice

How to
Heat the butter in a large pot over medium-low heat. Add the onion, celery, salt, and bay leaf. Sweat, covered, for 30 minutes, until the veggies are soft and translucent.

Add the chicken stock. Simmer for another 30 minutes.

Puree the soup until smooth.

Place the soup back on the heat. Add the cream, and lemon juice, plus more salt and pepper to your liking.
