Recipe for Coconut Bliss Balls – a perfect, healthy go-to snack

240g raw cashew nuts
110g desiccated coconut (natural, unsweetened)
170g raisins (no addes sugar, preservative-free)
130g dates, pitted and soaked
20g cashew nut butter
Pinch sea salt flakes

How to
Soak dates in hot water for 1 minute, then drain well.

Meanwhile, add the nuts to the mixer and pulse a few times until coarsely chopped. Add in all other ingredients, along with the drained dates, and blend until the mixture comes together in a ball and is a fairly smooth paste.

Divide into portions and roll into balls, and store in an airtight container for up to 4 weeks outside the fridge, or 8 weeks in the fridge.
