Easy dinner or lunch recipe for Chickpea and Mince Meatballs
Ingredients
Chickpeas drained and rinsed (400g tin)
170 g Extra lean mince
25g Tomato Paste (I used the mild spicy flavour)
1 large free range egg
Salt and pepper to season
1 Tbs Worcestershire sauce
1/2 – 1tsp crushed garlic (preference)
1/2 onion diced
1 slice rye bread (can substitute)
dash of Steers sauce (optional)
Extra virgin Olive oil for greasing pan
How to
Preheat oven to 180’C
In a bowl mash the chickpeas (can use a food processor), add all ingredients, mixing by hand is easiest.
Roll the mixture into balls. Size is up to you – make sure they are tightly shaped.
Grease a pan with the olive oil and place meatballs same distance apart.
Bake for around 45-50 min, until beautifully browned. Around the 30 min mark I carefully turned them over to brown on the other side.
Serve with salad or sides of choice
