Simple dinner recipe for Chicken Soup with cauliflower. Serve with your favourite crusty bread

1/2 stalk celery – dice (5mm)
1/4 onion – peel and chop
1/2 clove garlic – crush, peel and chop finely
3g fresh thyme – strip off leaves
1/8 tsp paprika
1 1/2 tsp chicken stock granules
1 cup boiling water (for chicken stock)
1 chicken breast – cut into cubes
1/4 cauliflower – grate coarsely
salt and pepper (from your pantry)
olive oil (from your pantry)

How to
Preparation: Prepare all ingredients as indicated above. Dissolve the chicken stock granules in the boiling water and set aside.

Soup: Heat a few glugs of olive oil in a large saucepan over medium heat. Add the celery and onion and cook for about 5 minutes until tender. Season to taste with salt. Add the garlic, thyme, and paprika and cook for another minute. Stir in the chicken and cauliflower and bring to a gentle boil. Once boiling, turn the heat down to medium/low and cook for 10 to 12 minutes until the chicken is cooked through. Check seasoning and add salt and pepper if needed.

Serve: Place the soup in the bowl.
