*Makes 4 ramekins


  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 small stick celery, diced
  • 1 small carrot, diced
  • 200g minced beef
  • 2 tbsp flour
  • 350ml beef stock
  • 1 tbsp tomato purée
  • 1 tsp fresh thyme leaves
  • 500g potatoes, peeled and diced
  • A knob of butter
  • 3 tbsp milk
  • 50g Cheddar cheese, grated


  1. Pre-heat the oven to 200°C.
  2. Heat the oil in a saucepan. Add the onion, celery and carrot and fry for 3 minutes. Add the beef and brown over the heat. Add the flour then blend in the stock, Worcestershire sauce and tomato purée and thyme. Cover with a lid then simmer for 35 minutes. Cook the potatoes in boiling water until tender. Drain, mash and add the milk, butter and Cheddar cheese.
  3. Divide the beef mixture between four ramekins. Top with the mash.
  4. Bake in the oven for 15 minutes.
