Make your own vegetarian Broccoli and Feta Strata with this simple-to-follow recipe


Caramelised onions:
2 Onions (halved and sliced)
¼ cup Sunflower Oil
Pinch Salt
2 Tbsp. Sugar
2 Tbsp. Balsamic vinegar

1 Packet Sasko Low GI Seeded Bread Buns (cubed)
300g Broccoli (cut into small florets)
200g Feta
8 Extra-large Eggs
2 cups Milk
Salt and pepper

How to
Place a large frying pan on medium heat, pour in the oil and add the onion slices, season with a good pinch of salt and fry for 10 minutes or until softened.

Add the sugar and balsamic vinegar and fry for a further 10 minutes or until sticky and delicious.

To make the Strata:
Grease a 33cm by 23cm or similar-sized baking dish.

Scatter half of the cubed buns into the dish and top with half of the broccoli and onions before crumbling over half of the feta.

Repeat with the remaining half of the bread, broccoli, onions and feta.

Mix the eggs, milk and a good pinch of salt and pepper together in a bowl and pour over the bread and broccoli etc.

Cover and allow to sit for 1 hour so that the eggs and milk mixture can be absorbed by the bread.

Preheat the oven to 180*C.

Uncover and bake for approximately 55 minutes to 1 hour or until the middle of the Strata has set and the top is beginning to brown.

Serve hot on its own or with a side salad.

(This is also delicious eaten cold and is great for packed lunches or breakfast on the go etc.)
