Bake your own healthy bread with this Butternut & Rosemary Health Bread recipe

450 g Sasko Wholeweat Flour
10 ml baking powder
5 ml bicarbonate of soda
5 ml salt
125 ml Bokomo Bran Flakes
10 ml chopped fresh rosemary (optional)
250 ml raw butternut, peeled and grated
60 ml ground almonds
15 ml grated orange rind
30 ml runny honey
45 ml orange juice
1 extra large egg, lightly beaten
500 ml buttermilk

How to
Preheat oven at 180C. Spray a 13cm x 20cm loaf pan with non stick cooking spray.

In a large mixing bowl combine the flour, baking powder, bicarbonate of soda, salt, bran, rosemary, butternut, almonds and orange rind. Beat honey, orange juice, egg and buttermilk together and add to other ingredients. Mix well.

Spoon into prepared pan and bake at for 50 to 60 minutes or until a skewer inserted comes out clean.

If desired, some deep fried butternut slices can be used to decorate the loaf. Using a vegetable peeler, peel thin slices of butternut. Preheat some oil in a pan and fry the butternut in the hot oil for 1-2 minutes. Drain on paper towel and use to decorate the top of the loaf.
