Whip up this recipe for sweet and flavour-filled Apple Cinnamon Muffins and serve as an any-time snack
1 cup brown sugar
½ cup softened butter
5 ml vanilla essence
1 ½ cups of flour
1 teaspoon baking soda
1 teaspoon salt
a few pinches of ground cinnamon
1 ½ cups grated apple – I kept the skin on
¾ cup plain full cream yogurt
2 tablespoons butter
3 tablespoons flour
1 teaspoon sugar
½ teaspoon ground cinnamon
In an electric mixing bowl cream the sugar and butter until pale. Add an egg one at a time and mix until incorporated. Add the vanilla essence and mix.
Add the flour, baking soda, salt and cinnamon. Mix until just incorporated. Next add the grated apple and yoghurt. Mix through and scoop the muffin liners ¾ of the way full.
For the crumble topping gently rub the butter and flour together until crumbly. Add the sugar and cinnamon – rub it through and use a teaspoon to add on top of the scooped batter.
Bake in the oven for 15 – 20 minutes at 180 degrees Celcius , leave to cool and enjoy.
