Recipe for a rich and almost instant Chocolate Mousse

150g mini marshmallows
50g soft butter (about 2 Tbsp)
250g good dark chocolate, roughly chopped
60ml recently boiled hot water
275ml double cream
1 tsp vanilla extract

How to
Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.

Put the saucepan on the stove, medium heat and melt the contents, stirring occasionally. Remove from the heat and set aside.

Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until smooth.

Pour into 4 glasses/ramekins, chill and bring back to room temperature before serving.

*Serving suggestion: topped with fresh strawberries (or any berries) as shown.
