A healthy and different Cookie recipe – with ginger, carrot and walnuts. Almost like a cookie version of carrot cake.

Ingredients
2 cups wholewheat flour
1 tsp baking powder
1 tsp ground ginger
dash of ground nutmeg
pinch of salt
1 1/2 sticks butter (170 grams), room temperature
1 egg
1/2 cup brown sugar
1 tsp vanilla extract
1 1/2 cup shredded carrots
1 cup chopped walnuts
