Fruit salad happiness

Fill your plate with vegetables and make fruit salad your mainstay dessert.

New research has detected an increase in happiness benefits for each extra daily portion of fruit and vegetables eaten.

In fact, people who change from eating almost no fruit and veg to eight portions of fruit and veg a day experienced a life satisfaction increase equivalent to moving from unemployment to employment!

For the study, more than 12 000 people kept food diaries and had their psychological well-being measured.

Researchers found substantial benefits occurred within 24 months of the improved diet.

Although more research is required, it may be possible to link this study to current antioxidant research suggesting a connection between optimism and carotenoids in the blood.
