Potatoes can suck up salt

Salt is the ultimate seasoning; too much or too little salt can ruin any dish. When you under salt a dish you can always add more salt, but when you add too much salt to a dish there is very little you can do to fix it.

If you over-salt a stew, soup or broth you can simply add a raw potato to it while it simmers.
