Looking for something a little different? This crunchy, chilled pea salad brings a light and tasty burst of flavour to your palette. Make it for your next braai, or enjoy it as a lunchtime staple

What you’ll need:

  • 500g frozen peas (don’t thaw)
  • 180 g chopped almonds (or choice)
  • 1/2 cup chopped spring onions
  • 200g chopped water chestnuts (optional)
  • 2/3 cup mayonnaise
  • 2 tsp mild curry powder
  • Salt and pepper to taste

What to do:

This super-easy salad can be made ahead of time if you’d like – just add the nuts at the last minute. It will keep about a day in the fridge.

If you’re using roasted nuts, be sure to rinse off the excess salt just before use. Allow them to drip-dry in a strainer. In a bowl, whisk together the spices and mayo into a smooth dressing.

Now add all the other ingredients and mix well. Be sure to give it a taste and adjust the seasoning if needed!

Pop it in the fridge until you’re ready to serve. Stir in the nuts just before you bring it to the table.
