Healthy, nutritious, tasty and quick – what more could you want in a dish? This super-simple chicken bake is perfect for a quick mid-week meal when everyone’s feeling a little frayed…

What you’ll need:

  • 3 deboned chicken breasts
  • 180g basil pesto
  • 2 medium tomatoes, sliced thickly
  • 3 slices of mozzarella cheese (or grate a handful)

What to do:

This dish couldn’t be easier. Simply preheat your oven to 180 degrees celsius. Place the chicken breasts in a greased baking dish. Spoon a generous helping of pesto onto each breast, then layer the cheese and top off with a tomato.

Bake for about 30 minutes, finishing the last two at a broil to ensure the cheese is golden and bubbly. Your dish is done!

This simple, yet delicious, dish can be eaten as is, or paired with pasta or rice to ensure a midday meal that’s as welcoming and comforting as it is easy to make.
