There’s little more frustrating, as a baker, than carefully giving your latest masterpiece your all, only to find your icing bag has dried up halfway through the job. The solution to your woes, however, is surprisingly simple…

Line the bottom of a glass with a damp cloth – microfiber is especially great for this job. As you finish working on each section, place the piping back (tip to cloth) into the glass. This ensures the exposed icing never has a chance to dry out or get clumpy.

Likewise, if you’ve pre-prepared several colours (or flavours) of icing, cover the bowl with a damp cloth until you need it, ensuring the icing doesn’t dry out too early in the process.

Keep your icing malleable and fresh with this simple trick, and you’ll find the entire baking process much more enjoyable, start-to-finish.
