If you’re keen to avoid the crowds this Valentine’s Day, we don’t blame you. Fortunately, whipping up a great meal for two needn’t be a ton of extra stress. Try this simple meal for a fuss free celebration for two.
What you’ll need:
- 1 tbsp soft butter
- ½ teaspoon minced garlic
- 1 teaspoon each (chopped) of chives and rosemary
- 1 small sweet potato, peeled and cut
- ¼ cup milk
- Salt and pepper to taste
- 1 small bunch tenderstem broccoli or broccolini
- 4 teaspoons olive oil
- 2 120g filet mignon steaks (think 3cm thick)
What to do:
This simple dish will take you about 40 minutes.
Set your oven to 220 degrees, and mix the herbs, garlic and butter in a bowl.
Pop the sweet potato in a steamer basket (or make your own on the stove) until soft.
Add milk, 1 tsp of the herb butter you made, and a little salt. Mash until it’s perfect and pop aside to stay warm.
Toss the broccolini in half the oil, some pepper and salt in a large bowl, coat well and place on a baking sheet to roast until soft (should take 10 minutes).
Meanwhile, pat your streaks dry and season with salt and pepper.
Heat your remaining oil on medium-high heat
Cook the steaks until browned, then pop on the other side of the baking sheet until perfect.
