How exactly do you cook spinach?
If the leaves are fresh and delectable, the secret lies in keeping cooking time to a minimum. All you’ll need is your spinach, some extra virgin olive oil, a few garlic cloves and a few pinches of salt.
You’ll need to prep your spinach by removing thick stems then washing well (grit and even small stones can be a problem otherwise).
Drain and rinse two or three times, and be sure to spin as dry as possible.
Heat your garlic in the oil, then add the spinach.
Heat for a minute under the lid, then lift and stir thoroughly.
Repeat for one more minute, and you’re done!
Drain excess moisture.
Sprinkle with a little more olive oil and salt, and you’re ready to go.
The leaves should look wilted, but not slimy and soggy.
